Mint Oreo Chocolate Chip Brownies

Sometimes your big sister repeatedly reminds you that her half birthday is coming up, along with multiple hints that half birthdays are the perfect excuse for a baked good. I happen to agree with her because I literally think anything and everything is a perfect excuse for a baked good.

To be honest, these brownies were not my first attempt at a minty dessert to send along as a half-birthday gift. I originally made brownies with mint filling and a chocolate ganache on top. However, something along the way went exceptionally awry with the mint filling. It was gooey and messy and melty. There was no way these brownies would travel in the mail. Besides the fact, they tasted like they were filled with a sugary layer of overly-minty toothpaste. I’m not the biggest mint girl to begin with, but these brownies were way too minty for even mint’s most passionate lovers. They were also unnaturally green due to one too many drips of green gel coloring. Consequently, I decided to head in a different direction for Emalie’s half-birthday treats.

These Mint Oreo Chocolate Chip Brownies that I made instead, are dark chocolate brownies loaded with semi-sweet chocolate chips and chunks of Mint Oreos. They are really beyond delicious. Nabisco really nailed the mint green color in their Mint Oreos, and I didn’t feel like I was consuming an entire tube of Crest Whitening Power with Scope when I tried them. I call that a second-attempt baking victory.

Anyway, happy half-birthday, Emalie and enjoy these Mint Oreo Chocolate Chip Brownies. I’m sorry I’m posting this recipe before you even receive them in the mail but I promise you, it’s all part of the hype of officially turning 31 1/2.

Mint Oreo Chocolate Chip Brownies

Ingredients

  • ½ cup butter 1 stick
  • 1 cup white sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • cup dark chocolate cocoa powder
  • ½ cup all-purpose flour
  • ¼ tsp salt
  • ¼ tsp baking powder
  • 1 cup semi-sweet chocolate chips plus more for sprinkling on top
  • 16-20 Mint Oreos (crushed) plus more for sprinkling on top

Instructions

  1. Preheat the oven to 350° F and prepare an 8" x 8" pan by spraying with cooking spray and set aside.
  2. Melt the butter in a saucepan or the microwave in a microwave-safe bowl. Mix in the sugar, eggs, and vanilla. Then, mix in the cocoa powder, all-purpose flour, salt, and baking powder. Fold in the chocolate chips and the crushed up Oreos. Save some chocolate chips and Oreos for sprinkling on top after baking, if desired.
  3. Bake for 25-30 minutes, until a toothpick comes out clean. Top the warm brownies with chocolate chips and additional Mint Oreos. Let cool for about 30 minutes before cutting and serving. Enjoy!
