White Chocolate Chip Funfetti Cookies

I’m here to announce that all rainbow sprinkles are not created equal. I’ve been a rainbow sprinkles customer for as long as I can remember, always grabbing the little tub in the baking section at the grocery store, and more recently ordering  2lb tubs of the little jimmies on Amazon as my rainbow sprinkle usage has increased as of late. They’re one of my favorite things to add to a dessert (ranking just after chocolate chips of course), but they always seem to be the same mix of colors, the same ratios of whites to pinks and oranges, and while I love them more than almost anything else in the entire world, sometimes I think they bore me just a tad.

Every once in a while I see a different sort of rainbow sprinkle mix pop up on someone’s cupcakes on the old ‘gram, and I think to myself, holy shit, those are the prettiest rainbow sprinkles I’ve ever seen. The sprinkles of which I speak look like generally the same color mix, but something about them is jusr so much better than my usual rainbow sprinkles. I think it’s the addition of the purple (now that I think of it, how can regular rainbow sprinkles even call themselves sprinkles without purple?) Sometimes I’ll even be lucky enough to find them in person. They pop up at a random soft serve ice cream shop and I squeal with delight as I order my rainbow sprinkle-covered swirl cone. I always wondered where they came from and how rainbow sprinkles could honestly be so pretty.

And then one day recently, I ventured out to Walmart for purposes I’ve now forgotten. It’s a rare occasion that I find myself in Walmart for a variety of reasons, most of them coming down to the fact that I literally hate it in there, but well, well, well, what do you know. There in the Walmart baking aisle, sitting there with the cupcake liners and birthday candles and canned icing, are the goddamn rainbow sprinkles I’d been looking for for years. Just look at the comparison though.

It’s not even right that rainbow sprinkles should be this different

Ever since finding those there bottom rainbow sprinkles, I’ve been putting them in and on everything that bakes. Even these White Chocolate Chip Funfetti Cookies are merely a vehicle for me to just be around these rainbow sprinkles. Nonetheless, these cookies are wonderful and I know that’s why you’re here. The Funfetti dough is a sprinkles dream come true, and they are filled with white chocolate chips. They remind me of a big ole party, a sprinkle party Funfetti cookie to celebrate the rainbow sprinkle mix I’ve longed after for years finally becoming mine.

White Chocolate Chip Funfetti Cookies

Ingredients

  • 1 cup unsalted butter softened two sticks
  • 3/4 cup light brown sugar
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp salt
  • 2 cups white chocolate chips plus more for sprinkling on top
  • 1 cup rainbow sprinkles plus more for sprinkling on top

Instructions

  1. Preheat the oven to 350° F. Line cookie sheets with aluminum foil and spray with cooking spray or line with parchment paper or silicone mats. Set aside.
  2. Cream together the butter, sugar, and brown sugar in the bowl of an electric mixer, until smooth and creamy. Add the egg and vanilla and mix until smooth. In a small bowl, mix together the flour, baking soda, and salt, and stir until just combined. Slowly add the dry ingredients into the wet ingredients, mixing on low to medium, until well combined.
  3. Fold in white chocolate chips and rainbow sprinkles, saving some to top the cookies with at the end. For large cookies, scoop 1/4 cup portions of dough on the pan. If you make them this large, only put about 6 on each pan. For smaller cookies, drop the dough in smaller rounded tablespoons, putting 12 on each pan.
  4. Bake for about 10-12 minutes (larger cookies will take longer) until the edges of the cookies look golden brown. Sprinkle the top of the bars with the remaining white chocolate chips and rainbow sprinkles. Let the cookies cool for about 15-20 minutes before serving. Enjoy!
