Berry Crumble Bars

Ingredients:

Oatmeal Bars & Topping:

  • 2 1/2 cups all-purpose flour
  • 1 1/2 cups old fashioned oats
  • 1 tsp cinnamon
  • 1/2 cup brown sugar
  • 1 cup granulated sugar
  • 1 cup 2 sticks butter melted
  • 1 large egg

Berry Filling:

  • 4-5 cups frozen berries I used blueberries, blackberries and raspberries, but any combination of berries will work
  • 1/2 cup granulated sugar
  • 2 tbsp lemon juice I like using fresh!
  • 3 tbsp corn starch

Instructions

Directions:

  1. Preheat the oven to 350° F and line a 13"x9" pan with parchment paper, with enough so that it hangs over the edges of the pan.
  2. Mix together the flour, oats, cinnamon, brown sugar and granulated sugar. Add the egg and the melted butter and mix thoroughly. Scoop out 2 cups of the mixture and place in a separate bowl for now. This will be reserved for the topping. Add the rest of the mixture to the pan, and press down firmly.
  3. To make the berry mixture, mix all of the ingredients in a bowl, so that the berries are evenly coated in the sugar, lemon juice, and corn starch. Spread the mixture evenly over the oatmeal base. Then, crumble the reserved oatmeal mixture over the berry layer for the oatmeal crumble topping.

  4. Bake for 45-50 minutes, until the crumble on top starts to turn golden brown. You do not need to let them cool if you are serving in a bowl with vanilla ice cream and eating more like a cobbler. However, to ensure that they turn into bar form, cool in the fridge for 2 hours before cutting and serving (hopefully warmed back up with that scoop of vanilla!). Store bars in the fridge.
