Mini Oreo Chocolate Chip Cookies

Servings 25 cookies

Ingredients

  • 2 1/4 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 cup (2 sticks) unsalted butter softened
  • 3/4 cup light brown sugar
  • 3/4 cup granulated sugar
  • 1 tsp vanilla
  • 2 eggs
  • 2 cups chocolate chip (more for garnish)
  • 1 bag Mini Oreos (one big bag or two of the smaller pouches)
  • 1/2 cup rainbow sprinkles

Instructions

  1. Preheat oven to 375° F.

    Combine flour, baking soda and salt in small bowl. Beat butter, granulated sugar, brown sugar and vanilla extract in large mixer bowl until creamy. Add eggs, one at a time, beating well after each addition. Gradually beat in flour mixture. Stir in morsels and crushed Mini Oreos, saving some whole Oreos to place on top of cookies after baking. Use a cookie scoop to drop dough onto cookie sheet. I did two scoops for larger cookies.

    Bake for 9 to 11 minutes or until golden brown. Sprinkle more chocolate chips, Mini Oreos, and rainbow sprinkles on top. Cool on baking sheets for 2 minutes, and then place on wire racks to cool completely.
