Peanut Butter and Berry Oat Bars

Servings 18 bars

Ingredients

Oatmeal Bars & Topping:

  • 2 1/2 cups all-purpose flour
  • 2 cups old fashioned oats
  • 1 tsp cinnamon
  • 1/2 cup brown sugar
  • 1 cup granulated sugar
  • 1 cup 2 sticks butter melted
  • 1 large egg
  • 1 1/2 cups peanut butter divided

Berry Filling:

  • 4-5 cups frozen berries I used blueberries blackberries and raspberries, but any combination of berries will work
  • 1/2 cup granulated sugar
  • 2 tbsp lemon juice I like using fresh!
  • 3 tbsp corn starch

Instructions

  1. Preheat the oven to 350° F and line a 13"x9" pan with parchment paper, with enough so that it hangs over the edges of the pan.
  2. Mix together the flour, oats, cinnamon, brown sugar and granulated sugar. Add the egg and the melted butter and mix thoroughly. Add in about 1/2 cup of peanut butter and mix well. Then, scoop out about 2 1/2 cups of the mixture and place in a separate bowl for now. This will be reserved for the topping. Add the rest of the mixture to the pan, and press down firmly.
  3. Melt the remaining 1 cup of peanut butter and spread over the peanut butter "crust". Feel free to use more peanut butter based on how much peanut butter you like.

  4. To make the berry mixture, mix all of the ingredients in a bowl, so that the berries are evenly coated in the sugar, lemon juice, and corn starch. Spread the berry mixture evenly over the peanut butter layer. Then, crumble and spread the reserved oatmeal mixture over the berry layer for the oatmeal topping.
  5. Bake for 45-50 minutes, until the crumble on top starts to turn golden brown. Let the bars cool for at least 1 hour at room temperature before cutting into bars and serving (my favorite is warmed up with a scoop of vanilla ice cream). Store bars in the fridge.
